300ml whole milk

2 bay leaves

2 thyme sprigs

½ tsp black peppercorns

3 cloves

400g undyed smoked haddock (skin-on)

3 medium egg yolks

175g unsalted butter, melted

1 tsp white wine vinegar

75ml double cream, lightly whipped

8 medium eggs

Knob of unsalted butter

80g gruyère, finely grated

Green salad and crusty bread to serve
