Pile ’em high with this triumphant salmon blini stack; it makes for an impressive dinner party starter but also makes a knockout Christmas brunch dish.

Ingredients

35g buckwheat flour

75g strong white flour

1 tsp fine salt

½ tsp easy blend yeast

100g crème fraîche

140ml whole milk

1 large free-range egg, separated

Sunflower oil for frying

340g full-fat cream cheese

3 tbsp hot horseradish sauce

Handful fresh parsley, finely chopped

Handful fresh dill, finely chopped

Handful fresh mint, leaves picked and finely chopped

2 tbsp capers

240g smoked salmon slices

Salmon caviar and grated lemon zest to serve
