750g floury potatoes
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
12 fresh curry leaves
½ tsp mustard/cumin seeds
25g butter
4 green chillies, finely chopped
100g hard cheese, such as cheddar, grated (optional)
