Ingredients

2 tbsp olive oil

½ onion, finely chopped

3 garlic cloves, finely sliced

50g tomato purée

500g passata

60ml vodka

60ml single cream

150g spaghetti

2 basil sprigs, small leaves reserved to garnish

Finely grated parmesan to serve

For the pork

2 pork loin steaks, fatty rind removed

30g plain flour

1 medium egg, beaten with a pinch of salt and a dash of milk

80g fresh or panko breadcrumbs

Vegetable or sunflower oil to shallow-fry
